Green Olives
Green olives harvested from the North Aegean region are carefully selected at the beginning of the harvest season, before they change color. The olives are sorted, washed, and graded, then fermented in brine to develop their table-ready flavor.
They are packaged in a wide range of calibers as whole, cracked, and scratched olives.

Black Olives
Black olives are harvested from the North Aegean region at full maturity, when the fruit has reached its natural color.
The olives are sorted, washed, and graded before being placed in brine. After the fermentation process in brine tanks, they are seasoned to achieve table-quality flavor.
